Summary The article examines the influence of milk quality of Holstein cows of different linear affiliation on the quality of "Adygeisky" cheese. The analysis of the composition and technological characteristics of milk in animals of different lines, as well as their influence on the parameters of the finished product, is carried out. The results of the study contribute to increasing the efficiency of cheese production and improving the quality of products.
