Annotation. To enrich food products with biopeptides, it is advisable to use synthesized peptides because they can be obtained in large quantities and of stable quality. In this regard, there is a need to create a draft technological regulation for the production of synthesized biopeptides. The purpose of the research is to develop technological regulations for the laboratory production of synthesized slow-release biopeptides. When developing the technological regulations for the production of synthesized peptides, they were guided by Federal Law No. 184-FZ of December 27, 2002. The technological regulations for the laboratory production of synthesized slow-release biopeptides have been developed, which includes the following sections: requirements for the finished biopeptide, components and equipment for synthesis, microcapsulation and evaluation of the biological effectiveness of biopeptides, description of the biopeptide synthesis process, assessment of the degree of purity of the biopeptide, methods for confirming the safety (assessment of cytotoxicity and toxicity) of the biopeptide.

Keywords: peptides, technical regulations, synthesis, safety confirmation
