Enzyme preparations and biocatalytic processes in the food industry

Abstract Enzyme preparations play an essential role in the biotechnological processes of obtaining food products. The main food enzymes that make it easier for the body to digest various products are presented, which include: amylase, lactase, lipase, maltase, sucrose and protease. The effect of proteases on the human body is shown. The review of the main directions of the use of enzymes in the food industry is carried out.
