Development and research of a fermented whey drink for school meals

Summary A balanced diet plays an important role in the healthy growth and development of children. Their growing bodies undergo active processes that require a variety of nutrients to maintain health and optimal development. They require a variety of nutrients to ensure normal functioning and growth of the body. The novelty of the work lies in the use of whey protein hydrolyzate, lactulose syrup and dietary fiber in the production of a functional whey drink for school-age children, as an alternative to school milk. Thus, when drinking a whey drink in a serving of 200 g, you can cover a certain need for vitamins and minerals: vitamin C by 7%, B6 by 10%, vitamin A by 5 to 42%, calcium and phosphorus by 65%, potassium – 10%.
