Abstract The article examines the study of the process of primary processing of pork by-products and characteristics of equipment for processing and production of pork by-products on the basis of the enterprise JSC Sibagro. The main processes of processing by-products, the dependence of processing on the type of product are given. The processes and characteristics of the equipment used for processing by-products at the Sibagro JSC enterprise are described. The main qualitative characteristics of the finished pork offal obtained during the production process on special equipment are also noted.
